That is what they call weight doping, and there’s nothing stopping that from happening in open races or free rides. More organized races and professional races will have weigh in requirements to prevent that. Also, height matters too (for drafting calculations) so that’s another way people can cheat that they have to control in higher level races.
Having everyone at the same weight is a bad idea and would kill Zwift. It’s trying to emulate outside riding, where people have different weights (that’s why w/kg is used, so you can compare people with vastly different weight).
Some race organizers do ask people to do weigh-in videos in cycling kit before important races. All of the top-level Zwift events like the current Zwift Gran Prix do, and for the plebs, the ZRL playoffs races did as well for all categories.
Though in a lot of ways the current category system is a weight class system for those in the D,C,B cats. It is almost always better to be heavier if you at the top of the category.
Zwift always considers weight when determining how “fast” you are going through. So yes, racing dynamics also consider weight (heavier riders need more power to go up a hill at the same speed etc.) If your question is are there weight categories for zwift races the answer is not really. The categories are based on w/kg ftp so definitely weight related but there are no “80+ kg” categories for example
